Il Cerreto is a biologic farm situated near Volterra; they produce cereals, vegetables and legumes, everything produced by following a biodynamic cultivation. Tagliatelle are made exclusively by a specific durum wheat semolina called Khorasan, cultivated by a biologic method. Pasta is produced by bronze drawing with a drying at low temperatures. The bronze drawing has a particular structure, pasta does not come out as smooth as the common one, but rather rough, this helps the pasta to retain the seasonings to make the taste very pleasant.
